EVENT DESCRIPTION
Join renowned mushroom expert, educator and founding member of the Association of Foragers, Bill O'Dea, for an immersive autumn day exploring the fascinating world of funig within the woodlands and landscape of Killruddery Estate.
Beginning in the Killruddery Flower Studio with tea and coffee on arrival and an illustrated presentation, Bill will introduce participants to the ecology, identification and folklore of native Irish mushrooms, alongside wider conversations around woodland biodiversity, sustainable foraging and the changing Irish landscape.
Following a seasonal lunch in the Grain Store, the day continues with a guided woodland and estate walk focused on observation, identification and ecological understanding. Rooted in Killruddery's biodiversity and stewardship ethos, the experience encourages participants to engage deeply with the landscape through a thoughtful and responsible approach to foraging and habitat awareness.
Guests will then return for a collaborative cooking demonstration and tasting session led by Bill alongside Killruddery Head Chef Niall O'Sullivan, using a small intentional forage gathered during the walk together with cultivated mushrooms from Ashford Mushrooms and seasonal herbs from Killruddery Gardens. A modest wine pairing will also be included.
This small group workshop offers a rare opportunity to slow down, observe, and connect more closely with the hidden ecological networks of autumn.
Suitable for beginners and those with an existing interest in fungi, biodiversity and woodland ecology.
ABOUT BILL O'DEA:
Bill O’Dea has spent many years leading mushroom walks and educational programmes throughout Ireland and has worked alongside leading mycologists, foresters and conservation organisations. His work explores not only edible fungi, but also the vital role fungi play within woodland ecosystems and biodiversity recovery.

- All materials for this workshop are supplied
- This workshop will take place from 10.30 - 5pm and includes a welcome tea/coffee on arrival, and lunch in The Grain Store
- Please wear warm, thick soled shoes, and dress to suit the day's weather
- Please allow yourself plenty of time to arrive, park in our main customer car park and follow signs to the workshop
